   With hints of spring enticing our surroundings, the comforting dish of colcannon, an Irish tradition, helps the transition with a gathering of greens.<p>As we emerge out of winter, images of fresh produce and much more sunlight fill our minds. I've got a preference for kale, and this particular crop is simple to develop and abundant during the bleak winter months. Add potatoes to cooking water and cook potatoes for approximately 15-20 minutes.In the meantime, wash and pat dry kale. Heat oil in a large nonstick skillet over medium heat. While oil is warming, remove comes from kale and place in skillet. You'll hear the kale crisping. Add garlic and onion powder to kale to taste, depending on preference. Cook kale for about Five to ten minutes, depending on desired crispness.After cooking potatoes for 15-20 minutes, test for doneness by inserting the purpose of a paring knife into the potatoes.
